On Saturday, the kids and I were hanging out in my son’s room and I asked about this little cardboard box. My son confessed to not knowing why he had it and said, “I’m a hoarder.” We all laughed really hard and decided it would be fun to make some more!

20131122-152209.jpgTwo of our friends got married. I was freezing because I’m a wimp, but it was a really sweet night. We are so happy for them.

A bunch of the youth helped with the catering. They were guarding the dessert table, but a couple of guests got through, so they took this approach.

On Sunday, we had a memorial for our grandmother/great grandmother. My son, who does not like being in front of a group of people, agreed to do one of the Bible readings. When my husband asked him, he just said yes, like it was no big deal. Then right before the service, I asked him if he was nervous. He said, “It’s just six verses, Mom. I think I can do it.”

So, I opened an Etsy store. I wanted to find a way to raise money for¬†all the mission organizations and world changers that I know. I made these cute headbands. After wearing them this week, I’ve learned that they need some tweaking. They hurt like heck! We’re still in product development. ūüôā I’ll keep you posted.

I forget that this big kid was my original wild child. He’s so responsible now, but there was a time when climbing the furniture and pulling all the books off the shelf was his full time job. What is he doing here, you ask? He’s being a sloth for an animal game with his little brother. Obviously.20131108-075851.jpg

This kid has learned how to say the word, “Run.” It’s turned him into quite the trainer. One day, he pointed straight at me and told me to run and then climbed into his jog stroller. The next day, I wasn’t running fast enough for him because we lost sight of his daddy. So, he yelled, “Run! Run! Daddy!” As if keeping up with him wasn’t hard enough already.20131108-080127.jpg

Meals Shmeals

Hi Friends! This post is mainly for my mom friends. Yesterday, we had a discussion about meal planning. We were sharing all our ideas and the different recipes we love, but it is 2013, and we need links! So, I’m posting them all here. If you don’t care about meal planning, just ignore this one.

How to Use Google Calendar to Create a Menu

Here are a bunch of our favorite go-to salads:

Cilantro Lime Chickpea Salad : Easy to make spinach/chickpea salad.

Mediterranean Grain Salad : Simple bulgar salad. Could omit goat cheese to make vegan.

Amazing Quinoa Salad : This one is our favorite. We even make this for dinner guests.

Easy Avocado Lime Black Bean Salad : Similar flavors as the Amazing Quinoa, but much easier to make.

Pineapple Goat Cheese Salad with Arugula and Walnuts : Okay, this is just yummy! My cousin made this one at Thanksgiving and it has been in the mix ever since. We have walnut allergies, so we use pecans. Still yummy!

Here are some of the crock pot freezer meals, I’ve made:

Crock pot freezer meals : We can vouch for the Chicken Taco Soup, Chicken Tortilla Soup, and the Sausage and Bean Supper.  We have tried them and liked them. I sent the Chicken Taco Soup over to my in-laws and they REALLY liked it (the secret is in the beer :)).

Some things we have liked in the breakfast realm:

Hootenanny¬†: The taste of pancakes but you don’t have to do all that flipping. One pan.

¬†Rise and Shine Healthy Muffins ¬†I bake two batches of these muffins and then freeze them. The kids pull them out and microwave them for breakfast or for an afternoon snack. I don’t know why I bother freezing them, they don’t last more than a couple of days.

Some other tips that have helped us:

Shredded Chicken: I buy a big thing of chicken breasts and put them in my crock pots with cut up carrots, celery, onion, a couple cloves of garlic and seasonings. At the end of the day, I shred the chicken and put it in freezer bags. We use this for quick dinners of nachos, chicken quesadillas, salsa verde chicken burritos. I also strain the broth and load my freezer up with a ton of chicken stock.

Loaded Baked Potato Soup¬†: Really cost effective, crowd pleaser! It’s a guilty pleasure soup with cream cheese and bacon, but, man, is it tasty!

when there is too much fun

Blogging three times a week? Ha! You know when you think you are cooler than you actually are, and you think you can do more than you actually can? That pretty much sums up my life.:) I always, without fail, bite off more than I can chew. Not really because I think I’m cool, but because I don’t think I have to do the normal things, like sleep and eat.

Well, guess what? ¬†I do have to sleep and eat. ¬†I know, that was a surprise to me too. For the last couple weeks, Jon and I have been working on a VBS program for the kids at an amazing church here in the valley. ¬†We had so much fun, but every night and every morning, I had aches and pains in places I didn’t realize existed. ¬†That never happened when I was a kiddo in my twenties! ¬†My body is getting older. You should have seen the amount of vitamins I started taking every night. ¬†I’ve turned into my father! ¬†For the record, they totally worked. ¬†If your body is changing on you, I recommend hitting the vitamin aisle.

Our kids were troopers, but we wore them out too. ¬†Here’s a pic of my 5yr. old after a day of VBS:

Poor, overstimulated, balloon wearing, drive thru fed children. ¬†My daughter ate 4 donuts on Saturday. ¬†My son ate 4 sno cones. ¬†It will take us weeks to detox from this.;) ¬†We are “trying” to take it easy this week. ¬†I’m not quite sure we’re succeeding, but I’ve slept in ’til 7:00 for three days in a row. ¬†I’ll celebrate the small successes.

 

 

Summer Schedule

Oh, summer!  At this very moment, I am sitting in a bedroom and the temperature is climbing above 80 degrees.  I am propped up on my bed with laptop on lap, because my lovely desk, near the window, is bathed in beautiful sunshine that unfortunately brings an enormous amount of heat with it.  Time to rearrange the furniture.

It’s also time to rearrange the schedule. ¬†Is summer a busy time for you as well? ¬†I always think ahead to summer as lazy days of sunshine and lemonade goodness, but whenever I get here I find lots of busyness. ¬†So, in order to enjoy, and do well with all of my summertime commitments, I will be moving to a summer schedule for blogging. ¬†I will only be here about three times a week, but if your summers are like my summers, you will be here less too. ¬†So, it should all work out.;)

But, I want to leave you with a little more goodness from last summer.  This is a little video of the zipline the grown people made for the little people up at the family place in the woods.  Notice who is riding it towards the end.;)

This is how a mother’s heart grows strong.
